Brie and Prosciutto on Toast


I am pretty sure this is a cheat post because it doesn’t have a real recipe but it does have yumminess! Need a quick lunch? Thinly slice some good sourdough, layer on prosciutto, and and top each slice off with a thick wedge of brie cheese. Pop it under the broiler for a few seconds and you have a scrumptious parisian-style lunch. Don’t have prosciutto? Try apricot jam with brie instead!

I served this up with a baby artichoke that I fried in a little olive oil until it was tender and topped with lemon juice.
